Ivy Dai is a chef renowned for her modern plant-based dishes fusing Asian and French cooking techniques. The California native is a graduate of the Cordon Bleu Culinary Academy, and worked as a pastry chef for the Four Seasons and Ritz Carlton hotels in California.
After refining her pâtisserie skills at Lenôtre and Hédiard in Paris, she worked as a private chef aboard luxury yachts in the south of France.
In 2017, she opened her restaurant Graze California Cuisine in the south of France, and her latest cookbook Vegan Comfort Classics: Easy Dishes for Every Day of the Week is a collection of customer favorites - plant-based, gluten-free, and exploding with flavor.
